STAMFORD, Conn. -- The Paleo Diet, one of the top trending diets in the world, is now is soup form.
Stamford health coach Ali Rakowski, a Paleo enthusiast, has taken the concept of holistic health and humanely sourced food and created the first Paleo soup cookbook, complete with recipes, stories and memories.
Rakowski, a longtime food blogger who also runs Intersection Coaching , said she wanted to do something different when she started researching this book last January.
Her idea: to share people's food memories using bowls that spoke to them. She put the call out to friends and family and in response, crafted a seasonal Paleo soup for each one (49 in all!), stringing the recipes and stories together to create dozens of dishes filled with love.
To fund the project, she ran a Kickstarter campaign last May, reaching her goal in the first five days.

As for her favorite soup? "It's too hard to pick," Rakowski said. "If pressed I'd have to go with Butternut Squash Bisque in the fall, Buffalo Chili in the winter, Mushroom Puree in the spring, and Watermelon Gazpacho in the summer."
So far she said she has been overwhelmed by the response locally and online. "It brings me so much joy to know that people are sharing the warmth of my book with their loved ones," Rakowski said.
