Stamford Native Opens Cheesecake Baking Company In Norwalk

NORWALK, Conn. -- Brad Sibilio took a cheesecake recipe that has been in his family for three generations and decided to put his own spin on it. That has now culminated in the opening of the first storefront of BMS Baking Company on Liberty Square in Norwalk.

Sibilio, who was born in Stamford and grew up in Darien, started with his grandmother's recipe. He started to come up with his own varieties of the recipe, which had been handed down to his mother and then to him. He began by selling the cheesecakes out of his home to restaurants and country clubs, and then expanded to opening his own bakery this week.

"I thought, 'How can I make it even better?' And here I am today," Sibilio said at the grand opening celebration of the new bakery in Norwalk on Thursday. "I'm just so humbled that people are enjoying my cheesecakes and by all the feedback I've gotten and the comments that people are writing."

Sibilio said he likes to play around with different flavor combinations to create unique cheesecakes. BMS is currently offering 12 flavors, including New York, Pumpkin, Blueberry Swirl, Oreo and Maple Bacon. Sibilio has about 28 varieties he has created overall, and is constantly trying out new ones.

"I come up with things off the top of my head," he said. If there's a kind of cheesecake out there, he'll come up with a new way to make it his own. "I mix and match, and play around with anything."

He just made a new chocolate-covered cheesecake that he says is "to die for" and is planning on releasing seasonal flavors to coincide for holidays. For Thanksgiving, he'll be offering a pumpkin spice and a white chocolate raspberry, and a peppermint cheesecake for Christmas. He's also working on a jalapeno cheesecake that he's excited to offer in the future.

Mayor Harry Rilling congratulated Sibilio and the BMS team at the ribbon cutting for the new storefront just over the bridge from SoNo.

"This is a true American story of people with a passion for their business," Rilling said. "They enjoy what they do, and we know they'll continue to be successful."

Sibilio said he is thrilled with the greeting he has received from the Norwalk community and other businesses, and hopes to expand his business in the city. BMS Baking Company is located at 205 Liberty Square.
