The much-anticipated Plan B Burger Bar in Fairfield, which was originally set to open in 2013, is scheduled to open this week after it was beset by construction delays.

The newest eatery for the Hartford-based chain, which specializes in burgers, beer and bourbon, is located in the former post office on the Post Road in Fairfield.

“It looks so beautiful,” Plan B’s Design and Marketing Manager Rachel Hurvitz told Daily Voice from a table in the nearly ready restaurant Friday. “Fairfield’s been waiting for us a long time to open.”

Many people had been peeking inside the restaurant, Hurvitz said. In fact, while she was talking with Daily Voice outside the restaurant, one local resident inquired about a job.

“We’ve got a lot of people stop by to check in, see how we’re doing,” Hurvitz said.

Although the building that houses Plan B is new, its developers kept the original post office facade facing the Post Road. The set-up also contains a local flavor.

As an homage to times past, the logos of former brewing companies in the area were painted over exposed brick. Hull Brewery is one of the beer makers featured. Plan B’s Twitter feed said it was the last of the big New Haven brewers.

The back of the restaurant also contains a hair-on-hide wall covering. The cows depicted in the cover are an artist’s interpretation of famous paintings, including a version of Picasso’s Bull Man.

“They’re cubist studies on cows,” Hurvitz said.

Cows, of course, are also on the menu. The restaurant serves fresh, never frozen, certified humane, certified natural beef that is ground in house.

Hurvitz said the chain always has an eye out for new locations, and they are happy with their new Fairfield one.

“It’s a prime spot to bring in something new,” she said of the new Post Road location in downtown Fairfield.

Plan B has several locations in Connecticut, including one at the Stamford Town Center.
