Cava Mediterranean Opens First Connecticut Eatery In Greenwich

GREENWICH, Conn. -- CAVA, a Mediterranean fast-casual restaurant which specializes in a customizable menu of over 50 offerings, is ready for the Fairfield County lunch crowd.

The chain, which has seen its presence grow from 24 to over 40 locations nationwide in under 12 months, opens Tuesday, Oct. 31 at 129 West Putnam Ave. in Greenwich, and, as its tradition, is offering a free lunch from noon to 2 p.m.

The Greenwich location is the company's first in Connecticut.

The healthy eatery asks for a pay-it-forward donation to Grow To Learn, CAVA’s local non-profit partner, whose mission is to create green spaces where children and teens can learn about urban gardening, sustainability, and healthy eating.

CAVA was born out of a desire to fuel full lives through a bold and innovative food culture, rooted in the heritage of the culinary brand’s founders Ted Xenohristos, Ike Grigoropoulos, and Executive Chef Dimitri Moshovitis. 

The three first-generation Greek Americans are childhood friends who wanted to bring the authentic Mediterranean flavors and experiences of their Greek upbringing to a wider audience in a modern, accessible format. 

With 40 chef-casual restaurants and a line of handcrafted dips and spreads sold in over 200 Whole Foods Market locations, CAVA started as a full-service restaurant in Rockville, MD in 2006.

Among CAVA's signatures: Crazy Feta, Border Springs Spicy Lamb Meatballs, Cauliflower Quinoa Tabbouleh as well as creative rotating seasonal offerings of juices, soups, and roasted vegetables.
